I'm going to put aluminum heads on a 51 ford flathead, is there any prep to
do before hand? Does the block have to be planed?

If the block is true, then no. Use a good square or steel, criss cross
corner to corner,
down each side, and down the center, on each head surface of the block, and
check
with a feeler gauge. Any more then .002 gap anywhere between steel and
block surface, I would probably recommend planning.
Questions to ask yourself, when is the last time it had a valve job?
what's the current compression test readings? has it had over heating
problems?
