Another method if you want to keep the look of 3 carbs is to dummy the
center carb by sealing the throttle plates to the base plate and any vacuum
connections closed with epoxy. Obviously a junker would be the best to do
this to. Then modify the linkage so it only slides past the center carb
throttle shaft arm or remove it completely. Finally sweat solder the fuel
fitting shut to that carb and then screw it back into the fuel block and
reattach the fuel hose. It will appear that all 3 carbs are being used when
in fact the middle one is doing nothing at all.
More than a few guys have also done it the other way around and only run on
the center carb with the outer ones dummied.

Offy makes a blockoff plate, Speedway should have it or make your own from a
piece of
1/4" aluminum and polish it. Use 50 or 51 jets for 2 carb setup if I
remember right.
